This is South Indian pancakes made of rice and urad dal, especially served in breakfast.

Idli and Sambar


Recipe of Idli Batter

Ingredients

(1) Urad Dal- 1 cup
(2) Idli Rice- 4 cups
(3) Salt to taste
(4) Water

Method

(1) Wash the rice proper and leave it in water covered for four hours and keep it aside, then wash the urad dal for 40 minutes.

(2) Grind the urad dal in the mixer grinder by adding 1 or 2 cups of water as required, the mixture should be smooth.

(3)Then grind the rice in the mixer grinder by adding 1 cup of water for each portion of rice which is grinded.

(4) When both the mixtures are ready and smooth, add salt and mix them both nicely, and then keep it aside for 6-7 hours for fermentation.

Idli Moulds and Steamer


(5) Put mixture into greased Idli moulds and steam it for 15 minutes for best results.
