Well the name says everything. This soup is founded in India. It’s no ordinary soup. Its name Shahi Korma or Indian Royal Soup describes its status as a great prestige dish in the Indian cuisine.

Shahi Korma


Recipe for Shahi Korma

Ingredients                 

(1) Mutton (with bones) - 600 grams
(2) Cooking oil or ghee- 4 big spoon
(3) Garam masala- 1 big spoon
(4) Chopped onions- 1 cup
(5) Ginger garlic paste- 1 big spoon
(6) Coriander powder- 1 big spoon
(7) Red chilli powder- 1 & 1/2 tablespoon
(8) Salt to taste
(9) Dahi (curd) - 1/2 cup
(10) Kaju paste- 1/4 cup
(11) Garam masala powder- 1 tablespoon
(12) Fresh cream- 1/2 cup

Method

(1) Cut the mutton flesh (with bones) in approximate 1 inch pieces. Wash it nicely and keep it at one side.

(2) Add ghee and full garam masala in a deep vessel. When it gets hot add onions in it and cook it until it gets hot.

(3) Now add ginger garlic paste in it. Keep mixing so the mixture don’t stick up in the base.

(4) Add mutton pieces and cook it in full flame for 3-4 minutes. Do take good care of mutton while cooking; it should not be left partly cooked.

(5) Add salt, dhaniya (coriander) powder and red chilli powder. Cook for 2-3 minutes then add dahi (curd) and water in it.

(6) When it boils, sim it and close the lid. Let it cook mutton get nicely cooked.

(7) Add kaju paste and garam masala. Cook it on medium flame for 5 minutes. When it’s totally ready, add fresh cream and cook it for 10 more minutes.

Garnish it with dry fruits like badam (almonds), kaju and kashmira. And the exact ingredients and quantity of garam masala can be 5 green elaichi, 5 loung, 1 piece of dal chini and half piece of javitri leaf.
