Chicken Satay
Made of boneless chicken, grilled with spices which makes a great combination in this recipe.
Recipe for Chicken Satay
Ingredients
(1) Boneless Chicken Breast- 4
(2) Red Chillies (chopped) - 1
(3) Oil- 3 tablespoons
(4) Onion- 1 large
(5) Salt to taste
(6) Soy Sauce- 3 tablespoons
(7) Fish Sauce- 2 teaspoons
(8) Lemon Juice- 1 1/2 tablespoons
(9) Garlic (chopped) - 7 cloves
(10) Ginger (crushed) - 1 1/2 inch
(11) Brown sugar- 2 teaspoons
(12) Honey- 1 tablespoons and 2 teaspoons
(13) Peanut Butter- 5 tablespoons
(14) Coconut Milk- 1 tablespoon
Method
(1) Cut the chicken pieces into long strips, add it in a bowl, then add salt, soy sauce (2 tablespoons), fish sauce, lemon juice (1 teaspoons), garlic (4 cloves) , ginger (1 inch crushed) , brown sugar, honey (2 teaspoons) and mix them well and marinate for 1 hour in fridge.
(2) Heat oil on the griddle plate, thread the chicken pieces in the satay stick and place on the griddle plate, pour the marinade nicely over chicken and cook well, turn to satay time to time so that it gets cooked on all sides.
(3) Heat oil in pan, add onion and saute, add peanut butter, soy sauce, salt, red chilli and honey and cook nicely, then take the peanut sauce of the heat and keep aside.
Chicken Satay is ready, serve it with peanut sauce!
Sweet Martabak
One of the famous deserts
in Indonesian Cuisine made of
flour pancakes with chocolates and peanuts.
Recipe for Sweet Martabak
Ingredients
(1) Flour-
½ cup
(2) Yeast-
½ teaspoon
(3) Sugar- ¼ cup
(1) Salt
to taste
(2) Baking
Powder- ½ teaspoon
(3) Water- ¼ cup
(1) Egg-

(2) Baking
powder- ¾ cup
(3) Butter- 2 tablespoons
(1) Chocolate-
¼ cup
(2) Peanuts-
¼ cup
(3) Milk
(sweet) - ¼ cup
Method
(1) In a large bowl, add flour, sugar, yeast,
egg, baking powder, water and mix nicely then add salt and mix further, then
keep it aside for 3 hours or more so that the mixture will be settled.
(2) Chop the peanuts and chocolate nicely and
keep aside.
(3) Heat a non-stick pan and apply cooking
spray and then cook the batter into 2 pancakes shape.
(4) Apply butter on the top part of the
pancakes , then add milk little by little and sprinkle chocolates and peanuts.
(5) Fold it and cut into long pieces.
Sweet Martabak is ready, serve it!
Chilli Chicken
This is the most popular
multi-cuisine recipe which includes
Indonesian, Chinese and Indian Cuisines; it
has dry and gravy
variants which can be made without much difference.
Ingredients
(1) Boneless
chicken (diced) - 600 grams
(2) Ginger
(chopped) - ¼ teaspoon
(3) Egg
White- 2 cups
(4) Salt
to taste
(5) Corn
Flour- 1 ½ teaspoons + 2 teaspoons for Sauce
(6) Chilli
Sauce- 2 teaspoons
(7) Butter
Milk- ¾ cup or as required
(8) Tomato
Sauce- 3 tablespoons
(9) Oil-
5 tablespoons
(10) Soy
Sauce- 1 ½ tablespoons
(11) Vinegar-
1 ½ tablespoons
(12) Chicken
Stock- 2 tablespoons
(13) Water-
2 tablespoons
(14) Capsicum
(sliced) - 1 large
(15) Onions
(sliced) - 2 large
(16) Chillies-
4
(17) Garlic
(chopped) - 4 cloves
Method
(1) In a bowl, add chicken, salt and ginger and
marinate for 15 minutes. On the other side beat the egg white and 1 ½ tablespoons
corn flour and then coat the chicken pieces with this mixture.
(2) Now to prepare sauce, in a pan add chilli
sauce, tomato sauce, soy sauce, vinegar and chicken stock, make a paste of
water and corn flour and then cook the sauce in medium heat and when it starts
to boil, add the corn flour mixture in it and mix nicely till gets thickened
and then remove it from heat.
(3) Heat oil in a pan and fry the chicken till
gets golden brown in colour then keep it aside.
(4) Then heat oil in pan and sauté the onions,
chillies and capsicum for 5 minutes and then add the sauce in pan and then add
the fried chicken and cook until the sauce gets desired consistency.
Chilli Chicken is ready to be served, garnish
it with coriander leaves.

Beef Rendang
Its takes
hours to cook, Rendang is time taking and requires patience. The meat pieces
are slowly cooked in coconut milk and spices at right temperature until almost
all the liquid are gone, allowing the meat to absorb the condiments. The
cooking process changes from boiling to frying as the liquid evaporates.

Recipe for Rendang
Ingredients
(1) Beef
(cut into 5 cm thick) - 1 kilogram
(2) Coconut
milk- 800 ml
(3) Onion
(chopped) - 1
(4) Garlic
(chopped) - 4 cloves
(5) Ginger (chopped) - 3 cm
(6) Chili
(chopped) - 2
(7) Lemon
leaf- 1 stem
(8) Coriander seeds- 2 teaspoon
(9) Cumin seeds- 1 teaspoon
(8) Coriander seeds- 2 teaspoon
(9) Cumin seeds- 1 teaspoon
(10)
Turmeric powder- ½ teaspoon
(11) Coriander
leaves- 1/3 cup
(12) Salt to
taste

Cinnamon- 1 bark
Method
(1) Heat the
pan and add coriander and cumin seeds into it and cook in medium heat till it
gets aromatic.
(2) In a
bowl add turmeric, onion, garlic, ginger and chili, and mix it. Add beef in it
and mix it well and place it to the fridge to marinate for 4 hours.
(3) Heat a
sauce pan, add beef mixture, coconut milk, lemon leaves, cinnamon and bring it
to boil. Then simmer it for 2 hours till beef gets cooked and then discard the
lemon leaves and cinnamon. Then cook it for 20 minutes or more till liquid gets
evaporated.
Rendang is
ready. Serve it hot with rice.
Nasi Uduk
It is one on
the famous breakfast in Indonesia.
Nasi Uduk is made by cooking rice soaked in
coconut milk instead
of water, along with clove, cassia bark, and lemon grass.
It is commonly served with an assortment of side dishes, such as eggs omelette, shredded omelette, or telur balado, a hard-boiled egg in sambal sauce, fried beef, beef stew in sweet soy sauce, fried chicken or shredded chicken, anchovy with peanuts, rice vermicelli, fritters such as fried tempeh, potato patties or corn fritter, melinjo chips or onion cracker, and fried onion sprinkled on the top of the rice.
Recipe for Nasi Uduk
Ingredients
(1) Jasmine
Rice- 2 cups
(2) Milk- 1
cup
(3) Water- 1

(4) Cassia
Bark- 3
(5) Lemon Leaves-

(6) Salt as
required
Method
(1) In a cooker,
add all the ingredients together except rice and let it boil.
(2) Add the
rice and cook until its done.
