Recipe for Strawberry Sauce

Ingredients

(1) Strawberries (hulled) - 800 grams
(2) Granulated Sugar- 1/2 cup or as you like
(3) Cornstarch- 1 & 1/2 teaspoons
(4) Salt just a pinch

Method

(1) Heat the pan, then add strawberries, sugar, starch and salt and cook over low heat till sugar gets dissolved.

(2) Cook for ten minutes, if required water you can little if consistency gets thick.

(3) Remove it from heat and allow it to get cooled.

Your Sauce is ready!

This sauce can be used in various dishes like ice creams, cake,

Recipe for Chocolate Sauce

Ingredients

(1) Chocolate Chips (half sweet) - 1 cup
(2) Whipped Cream- ¾ cup
(3) Vanilla essence- 1 teaspoon

Method

(1) Heat the pan and then add chocolate chips and cream and stir continuously till chocolate gets melt.

(2) Then remove the chocolate from heat and let it cool down for few minutes and then add vanilla essence in it and mix nicely.

Keep the sauce covered in container for future use.

Recipe for Tomato Ketchup

Ingredients

(1) Tomato Paste- 180 grams
(2) Corn Syrup- ½ cup
(3) Vinegar- ½ cup
(4) Water- ¼ cup
(5) Sugar- 1 tablespoon
(6) Salt- 1 teaspoon
(7) Onion powder- ¼ teaspoon
(8) Garlic powder a pinch

Method

(1) In a sauce pan, add all the above ingredients and mix them nicely over medium heat.

(2) When it comes to boil, reduce the heat and simmer for 20 minutes stirring continuously.

(3) Now remove the pan from fire and let it get cool and refrigerate it covered in a container.

Tomato Ketchup is ready!

Tomato Sauce


This is a basic homemade vegetarian Tomato Sauce.

Recipe for Tomato Sauce

Ingredients

(1) Olive oil- ¼ cup
(2) Onion (chopped) - 2 cups
(3) Large carrot (chopped) - 1
(4) Garlic cloves (chopped) - 4
(5) Tomato paste or large tomatoes (chopped) - 4 cups or 5 pieces

Method

(1) In a large pan, heat the olive oil, sauté the carrot and onion for few minutes then reduce the heat and cover it for 25 minutes in low heat till vegetables gets sweat, then add garlic and cook for 5 minutes.

(2) Then add tomato paste or tomatoes and then cook it till gets boiled and then reduce the heat and simmer it for 15 minutes till flavour gets blended.

(3) Then let it be cool then blend it and strain it through strainer and then add the seasonings.

Tomato sauce is ready and can be stored up to 3 months in a sealed container.

CGS Tips

You can add water if the consistency of the sauce gets thickened.

Recipe for Green Chilli Sauce

Ingredients

(1) Green Chillies (sliced) - 20 pieces
(2) Oil- 1 teaspoon
(3) Garlic (crushed) - 4 cloves
(4) Onion (minced) - 1/2 
(5) Salt as required
(6) Vinegar- 240 ml
(7) Water- 500 ml

Method

(1) In a sauce pan, heat oil, then add chillies, garlic, onion and salt and cook for 5 minutes then add water and cook for 25 minutes, stirring nicely and then keep it aside and allow it to cool.

(2) Then mix the mixture in blender until gets smooth and then add vinegar and mix it nicely.

Your Sauce is ready and can be used up to 6 months in a sealed container.

Recipe for Mustard sauce

Ingredients                    

(1) Egg- 1
(2) Sugar- ¼ cup
(3) Salt to taste
(4) Flour- 1 tablespoon
(5) Mustard Powder- 1 teaspoon
(6) Beef Stock- 1 cup
(7) Vinegar- ¼ cup
(8) Pepper as required

Method

(1) In a bowl beat egg and sugar, then add flour, mustard powder, salt and pepper and whisk nicely till gets smooth, can use water if mixture consistency over exceeds.

(2) Cook the mixture in sauce pan till mixture gets thickened.

Mustard Sauce is ready.

It is the Chinese Sauce and has a great aromatic flavor.

Recipe for Shrimp Sauce

Ingredients

(1) Butter- 4 tablespoon

(2) Onion (chopped)- 1 cup
(3) Oyster- 8 oz.
(4) Water- 2 cups
(5) Thyme- 1 teaspoon
(6) Oregano- 1 teaspoon
(7) Basil- 2 teaspoon
(8) Garlic (chopped)- 4 pieces
(9) Butter- 4 tablespoon
(10) Flour- 2 tablespoon
(11) Cream- 1 cup
(12) Salt to taste

Method

(1) Heat the pan, melt butter, then add onions and cook for few minutes, then add oyster, water, oregano, basil and garlic and mix together.

(2) Then mix flour and butter to make roux and then add this to the above mixture

(3) Cook the sauce for 5 minutes, then add cream to it.

Your Oyster Sauce is ready!

Ingredients

(1) Mayonnaise Sauce- 1 cup
(2) Melted butter- 2 tablespoon
(3) Paprika- 1 teaspoon
(4) Garlic powder- 1/2 teaspoon
(5) Rice Vinegar- 3 tablespoon
(6) White Sugar- 3 tablespoon

Method

Mix all the ingredients and cover it, and then keep in fridge.

Mayonnaise sauce now easy to make

Easy to make this one but patience required. Used as salad dressing mostly.

Recipe for Mayonnaise Sauce


Ingredients (1 liter)

(1) Olive oil- 1 liter
(2) Egg yolks- 8
(3) French mustard- ¼ teaspoon
(4) Vinegar- 25 ml
(5) Lemon- 1
(6) Seasoning to taste

Method

(1) Place egg yolks, vinegar and seasoning in a clean bowl and whisk well.

(2) Add oil slowly, a little at a time, whisking continuously, until all the oil is incorporated.

(3) Finish the sauce by adding the juice of lemon and warm water. This is done to ensure coherence of the sauce and to prevent its turning or curdling.

NB: bowl should be moisture free and whisk with your hand either clockwise or anti-clockwise only.

Make Tomato Sauce at Home

It is red, kitchen sauce and have some common piquancy.It can be served with maximum dishes.

Tomato Sauce


Recipe for Tomato Sauce

Ingredients (1 liter)

(1) Flour- 80 grams
(2) Butter- 70 grams
(3) Dices of Bacon trimmings40 grams
(4) Onion- 80 grams
(5) Carrot- 80 grams               
(6) Celery- 40 grams
(7) Bay leaf- 1.5
(8) Garlic (crushed)- 1 clove
(9) Tomato Puree- 100 grams
(10) Tomatoes (chopped)- 50 grams
(11) Brown Stock- 450 ml
(12) Sugar- 10 grams
(13) Salt to taste

Method

(1) Melt butter in pan.

(2) Add roughly chopped vegetables, crushed garlic and cook it till slightly brown.

(3) Mix in flour and fry till it gets a sandy texture and a light brown color.

(4) Add tomato puree and chopped tomatoes, and stir.

(5) Add cold Brown Stock, stirring to prevent lumps and bring to boil.

(6) Add seasoning and cook for 1.5 hrs.

(7) Skim frequently.

(8) Strain and cover with butter.

Your sauce is ready!

Make Hollandaise Sauce easily at Home

It is a warm yellow and rich sauce.

Hollandaise Sauce


Recipe for Hollandaise Sauce

Ingredients 500 grams

(1) Melted Clarified Butter- 500 grams            
(2) Egg yolks- 5
(3) Crushed Peppercorns- 8
(4) Vinegar- 30 ml
(5) Lemon juice- 2 tsp

Method


(1) Melt butter in a pan and keep aside.


(2) Place crushed peppercorns and vinegar in a pan and reduce completely.


(3) Add one tablespoon of water and cool.


(4) Add egg yolks and whisk.


(5) Place the pan in the double boiler and whisk the egg yolks till it gets thickened. Then add melted clarified butter until it is blend and forms a smooth sauce. Add lemon juice.


(6) Strain through a fine strainer, correct seasoning.

NB: If sauce turns or curdles or is too thick, beat in a little hot water, a little at a time. If too thin then add teaspoon of lemon juice and whisk until it is thick, a little at a time.

How to make Espagnole Sauce

It is prepared from brown roux and Brown Stock.

Espagnole Sauce


Recipe for Espagnole Sauce

Ingredients (1 liter)

(1) Flour- 70 grams
(2) Butter- 70 grams
(3) Tomato Puree- 30 grams
(4) Brown Stock- 1.3 liters     
(5) Oil- 2 tablespoon
(6) Mirepoix for flavoring
(7) Carrots- 70 grams                  
(8) Onions- 70 grams                                                     

Method

(1) In a thick-bottomed pan, prepare brown roux and keep aside for cooling


(2) Then add tomato puree and stir properly to prevent lumps.


(3) Gradually mix in hot Brown Stock, stirring vigorously to blend well and cook on a gentle fire.


(4) Cook the mirepoix, carrots and onion in oil and add it to the sauce.


(5) Simmer gently for 3 to 4 hours.


(6) Remove the scum when it comes on top.


(7) Strain and cover with a thin layer of butter.

NB: Over-browning should be avoided, as it tends to make the sauce bitter.

Make Veloute Sauce easily at Home

It is prepared from blond roux and stock (Fish Stock)

Recipe for Veloute Sauce

Ingredients (1 liter)

(1) Flour- 90 grams                                                                       
(2) Butter- 90 grams
(3) Stock- 1 liter
(4) Mushroom trimmings- 25 grams


Method


(1) In a thick-bottomed pan, prepare blond roux.


(2) Add cold Fish Stock into the roux, stir vigorously to avoid lumps.


(3) Add mushroom trimmings.


(4) Simmer gently for one hour, stirring frequently with the wooden spoon.


(5) Pass through a fine strainer and cover with butter to prevent the formation of skin.

Make Bechamel Sauce easily at Home

Bechamel is prepared with white roux and milk mildly flavored with onion, clove and bay leaf.



Recipe for Bechamel Sauce

Ingredients (1 liter)

(1) Flour- 90 grams                                                                        
(2) Butter- 90 grams
(3) Milk- 1 liter
(4) Onion studded with
clove and bay leaf- 25 grams

Method

(1) Boil the milk with studded onion and set aside.


(2) Melt butter in a thick-bottomed pan.


(3) Add flour, stir and cook the roux over a gentle fire without coloring till it gets a sandy texture. Pour the milk into the roux stirring with a wooden spoon to avoid lumps. Simmer gently for half an hour. Remove the studded onion and pass through a fine strainer, cover with butter to prevent the formation of a skin.
