For Fish Lovers, White Fish Stock.

Fish Stock


Recipe for Fish Stock

Ingredients  (1 liter)


(1) Any fish bones- 400 grams
(2) Butter- 15grams
(3) Sliced Onion50 grams
(4) Peppercorns- 2
(5) White Mushroom trimmings3 grams
(6) Lemon juice- ¼ lime
(7) Parsley- 4 grams
(8) Bay leaf- ½
(9) Thyme- ½ sprig
(10) Water- 1.25 liters

Method

(1) Place the aromatics in the bottom of a buttered saucepan on top of the blanched shredded onions.


(2) Add the cleaned and cut fish bones and mushroom trimmings.


(3) Add the lemon juice and sweat the bones.


(4) Moisten the water, bring to boil, skim, allow to simmer for 20 minutes.


(5) Pass through muslin cloth, re-boil and cool it.


You can use any fish you want according you like.
