Penne Samosa
This is my first and unique experiment with samosa that is
Penne Samosa, just awesome in taste with juicy tangy penne fillings with outer
crust of samosa.
Recipe for Penne
Samosa
For Covering
(1) Refined Flour- 1 cup
(2) Olive Oil- 5 tablespoons
plus to deep fry
(3) Carom seeds (ajwain) - ½
teaspoons
(4) Salt to taste
For Filling
(1) Penne (boiled)- 1 cup
(2) Tomato sauce- ½ cup
(3) Onion- 1
(4) Green capsicum- ½
(5) Black pepper- 1 teaspoon
(6) Salt to taste
(7) Oil- ½ tablespoon
Method
For Covering
Mix the flour, carom seeds, salt and two tablespoons of olive
oil in a bowl. Add water little by little and knead into stiff dough, and keep it
aside being covered.
For Filling
(1) Heat the oil in pan then add all the sliced vegetables like
onion, capsicum, add salt and sauté it for few minutes till vegetables get
cooked.
(2) Add boiled pasta in it and mix it well.
(3) Add Tomato Sauce, black pepper and mix it well and cook for
few minutes.

Final Process
Make small balls of the dough so that you can round shape like
this:

Then put little Penne filling and then laminate it into 3D
triangle shape like this:

Then heat oil in karahi for deep fry the samosas in it till gets
golden brown.

Chilli Jeera Lassi
This is not a sweet Lassi but spicy version of it, very
nutritious and good for health.
Recipe for Chilli Jeera Lassi Recipe
Ingredients
(1) Curd- 1 cup
(2) Cream- ¾ cup
(3) Crushed Ice- 1 cup
(4) Salt- ½ teaspoon
(5) Cumin (jeera) Powder- 1 teaspoon
(6) Chilli- 2

Method
(1) In a blender or in a jug, add curd, cream and crushed ice and blend
or mix them nicely (I prefer blending for more smoothness).
(2) Then add salt, chopped Chillies and cumin into it and mix well.
(3) Then strain the Lassi with muslin cloth.

Your Chilli Jeera Lassi is ready! Serve chilled.
Medu Vada
One of the most famous South Indian dish, It’s served with Sambar or
coconut chutney for best taste.
Recipe for Medu Wada
(1) Skinned black gram- 1 cup
(2) Salt to taste
(3) Curry leaves- 8-10
(4) Black pepper powder- 1 tablespoon
(5) Cooking oil for frying.
(6) Hing (asafoetida) - ¼ tablespoon
(7) Jeera powder (cumin) - 1 table spoon.
Method
(1) Wash the blackgram and put it under water for 6 hours. After that, make it fine and make a paste of it.
(2) Add salt, hing (asafoetida), curry leaves, jeera powder (cumin) and powdered black pepper in the paste.
(3) Heat the cooking oil in a deep vessel for deep frying.
(4) Wet your hands and make small-small donuts from the paste.
(5) Fry the donuts in the cooking oil until it gets light brown and little crunchy.
Serve it, tastes best with Sambar and coconut chutney.

Kesar Badam Kulfi
Here is one recipe of Indian ice-cream called Kulfi. India is also
famous for his dry fruits other than spices. And an ice cream i mean Kulfi of
Indian dry fruits flavor is just words can’t explain except your drooling
face.

(1) Milk- 3 liters

Method
(1) Boil the milk in a sauce pan. Keep mixing until only 1 liter (5 cups) is left.
(2) Add Kesar (saffron) in hot milk and put it in the lessened milk in the above step. Cut the roasted almonds and mix it in milk. Add Cardamom powder and mix again.
(3) Put the mould in an air tight container and allow it to freeze in the refrigerator.
Your Indian Kesar Badam Kulfi is ready. It’s certainly one of the best ice-cream flavor and do remember us while eating it.

(3) Jeera powder (cumin powder) - 1/2 tablespoon
(4) Dahi (curd) - 2 big spoon
(5) Red Chili powder- 2 tablespoon
(6) Salt to taste
(7) Ginger paste- 1 big spoon
(8) Garlic paste- 1 big spoon
(9) Cooking oil for frying
(11) Chat masala- 1/2 table spoon
Method
(1) Cut the paneer pieces with tall lenght , thin breath and height (3"x1/2"x1/2")
(2) Add jeera powder, dahi , red chilli powder, ginger and garlic paste and lime juice in to corn flour and mix them all.
(3) Add paneer pieces into the prepared mixture and keep it for half an hour.
(4) Add cooking oil in a deep vessel, when it gets hot fry the paneer pieces inside it until they get crunchy.
(5) Add chat masala over it and serve hot.

Ingredients
(1) Green Grapes- 4 cups
(2) Crushed Ice- 1 cup
(3) Sugar- 2 teaspoons
(4) Lemon Juice- 1 teaspoon
Method
In a
blender, mix all the ingredients and blend nicely, then strain the juice so
that unwanted particles will be removed.
Enjoy
Chilled Green Grape Juice.
Pasta Pizza
This is combination of pizza and pasta and vegetarian also.
(1) Pizza Dough- 1
(2) Macaroni (boiled) -60 grams

Method
(1) Preheat
the oven to 200°C, put the dough in oven and bake for 15 minutes till gets
golden and then keep it aside.

(2) Heat oil
in a pan, add onion, chillies and paneer and cook it till turns golden in color.
Then add tomato, black olives, salt, pepper, chilli powder and cook till tomato
gets melt. Now add tomato sauce and mix well then add macaroni and cook for 5
minutes.
(3) Now put
half of cheese over pizza dough and then add the mixture we cooked above and
then add rest of the cheese over the mixture and then bake it in oven for few
minutes so that cheese will melt and pizza holds the toppings.

pasta pizza!
Cherry Cake
Simple
Homemade Cherry Cake, very delicious and easy to make.
Recipe for Cherry Cake
Ingredients
(1) Flour- 2 cups
(2) Baking Powder- 1 tablespoon
(2) Baking Powder- 1 tablespoon
(3) Butter - ½ cup
(4) Cherry Juice - ½ cup
(5) Milk - ¾ cup

(6) Sugar- 1

Method
(1) In bowl, beat butter, egg whites and sugar
for five
minutes, add baking powder and whisk again. Add with the liquid
alternately.
(2) Add cherry juice and milk into it and mix
well, then add
the flour and beat it nicely for 15 minutes.
(3) Put the mixture in greased cake pan and
bake it for 40 minutes at 250 °C.
Your Cherry Cake is ready, garnish it with
cherry pieces.
Banana Shake
(1) Banana- 1
(2) Milk- 1 cup
(2) Milk- 1 cup
(3) Sugar- 2 teaspoons
(4) Ice (crushed)- 1 cup
(5) Cream- ½ cup

Method
(1) Peel the
banana and cut into slices, then blend banana with milk, sugar, ice in blender.
(2) Add
cream into it and shake well.
Your Chilled
Banana Shake is ready.
Chilled Watermelon Shake
In hot
summers get a ‘Chill Pill’ with Chilled Watermelon shake!

(1) Watermelon (chopped) - 2 cups
(2) Sugar- ½ tablespoon

(1) Blend watermelon,
crushed ice and sugar in blender and strain it to remove seed particles.
(2) Then
again blend it adding cream with it.
Egg Shake
This is very
nutritious drink for body building and better growth.
(1) Egg- 3
(2) Sugar- 1 tablespoon

It is a mind
blowing recipe, very delicious when it’s served very hot.
Recipe for Mustard sauce
Ingredients
(1) Pizza Dough- 1
(2) Boneless Chicken- 350 grams
(2) Boneless Chicken- 350 grams
(3) Salt to taste
(4) Pepper- 4 tablespoon
(5) Oil for brushing
(6) Olive Oil- 1 tablespoon

(6) Olive Oil- 1 tablespoon
(7) Garlic (minced) - 2 cloves
(8) Onions (slices) - 2 cup
(9) Red Bell Pepper- 1 cup
(10) Tomato Sauce- 1 cup

(1) Heat
Olive oil in pan and add chicken, salt, pepper, garlic and cook for few minutes,
then add onions, bell pepper, and tomato sauce and cook it well and then keep
it aside for cooling.

(2) Then
place the dough in pizza pan or any plate with oil brushed in base, apply half
cheese over the dough and then add the chicken mixture over the cheese and then
add again rest of the cheese over the chicken mixture.
(3) Bake at
220°C for 15- 20 minutes until crust gets golden.

Coconut Balls
Delicious
Choco-Nutty balls with fun of Coconut.
(1) White Sugar- 1 cup
(2) Regular Rolled Oats- 3 ½ cups

(4) Coffee- 2 tablespoons

Method
(1) In a
bowl mix the oats, sugar and cocoa powder, then add butter and mix it nicely
till dough forms, then mix coffee, vanilla essence and melted chocolate till
its blended.
(2) In
another bowl, place the coconut flakes, take very small amount of dough and
roll between your hands to make small balls, then roll the balls in coconut
flakes and then keep it in fridge for 2 hours or more.

Mustard Sauce
Mustard
sauce is delicious and good for health, and can be accompanied by many dishes.

Caramel Popcorn
Most of them
had tried normal popcorn or spicy or cheese popcorn but now it’s time for
some sweet popcorn.
Recipe for Caramel Popcorn
Ingredients
(1) Butter- 1 cup
(2) Brown Sugar- 2 cups
(3) Salt- 1 teaspoon
(4) Vanilla Essence- 1 teaspoon
(5) Corn Syrup- ½ cup
(6) Baking Soda- ½ teaspoon

(1) Preheat
the oven to 280°C and place the popcorn inside it in a bowl or you can use
ready made popcorn from stores.
(2) Heat the
pan, melt butter in it, then add brown sugar, corn syrup and salt and mix well
till it boil and then leave it in medium heat for 5 minutes. Then remove it
from heat and then add baking soda and vanilla essence.
(3) Pour the
mixture over the popcorn and then bake it again for 1 hour, stirring every 20
minutes and then cool it (don’t let it break into pieces).
Your Caramel
Popcorn is ready, enjoy it!
Indian Chicken Soup
You all will
be familiar with Chinese chicken soups. The all taste in similar manner. Try
this, the Indian Chicken Soup. No soup has ever been this creamy.
(1) Chicken bones- 500 grams
(2) Water- 1 liter
(3) Butter- 1 tablespoon
(4) Jeera (cumin) - 1/2 teaspoon
(5) Maida (flour) - 1 & 1/2 tablepoon
(6) Chicken pieces- 100 grams
(7) Chopped garlic- 1 tablespoon
(8) Cooking oil- 1 tablespoon
(9) White chili powder to taste
(10) Salt to taste
Method
(1) Clean the chicken bones and wash them.
(2) Clean the chicken, wash it and cut it into small pieces.
(3) Put the chicken bones in a cooking vessel. Add 1 liter water and chopped garlic in it. Cook it till the water evaporates and only 600 ml. of it is left of 1 liter. Strain it and keep aside the Chicken Stock.
(4) Fry the chicken in butter until it gets hot.
(5) Heat the cooking oil, add Jeera (cumin) and Maida (flour) and cook it for one minute while continuously mixing it. Now add Chicken Stock, chicken, white chili powder and salt.
(6) Cook it for some minutes.

Homemade Pizza Dough
It takes
much time to make pizza dough so its recommended to make dough few days before
making any pizza.

Recipe for Pizza dough
Ingredients
(1) Dry Active
Yeast- 2 teaspoons
(2) Luke
Warm Water- 1 cup (temperature at 35°C)
(3) Sugar- 1
teaspoon
(4) Cold
Water- ¾ cup
(5) Salt- 1
teaspoon
(6) Olive
Oil- 2 tablespoon
(7) Bread
Flour- 5 cups
(8)
Butter/Oil for brushing
Method
(1) In a
bowl, pour 1 cup of luke warm water and dissolve yeast in it and then leave it for 5
minutes.
(2) In
another bowl, add cold water, olive oil, sugar, and salt and whisk nicely.
Kneading Dough |
(3) Then in
a large bowl add 5 cups of flour, add yeast mixture and cold water mixture into
it, mix and knead it properly for 10 minutes until dough forms, leave it for 5
minutes and then again mix and knead for 5 minutes till dough gets smooth, and
then turn dough into a floured surface and knead until gets smooth and elastic.
(Add little flour in between to avoid stickiness).

(4) Divide
the dough and keep them inside butter/oil greased sealed container for more
than 24 hours. Keep it in room temperature for 2 hours before its use.

All are not professional pizza makers so you can make dough in pizza shape like above given picture.
Fruit Jelly Gumdrops
This is
homemade Fruit Jelly Gumdrops which is now easy to make.
Ingredients
(1) Gelatin
(plain) - 2 tablespoon
(2) Water- 1
cup
(3) Sugar- 2
cups
(4) Food
coloring extracts as wish (I used orange, banana, mango, green apple, black
current, strawberry)
Method
(1) In a
bowl, add ½ cup water then sprinkle with gelatin powder and leave it for 5 or
more minutes till it gets soaked.
(2) In a sauce
pan boil ¾ cup of water and then add sugar (2 cups) then bring to boil and
simmer for 5 minutes so that sugar syrup will be ready.
(3) Then
split the mixtures into 6 different bowls as I used 6 different flavors, add ½
teaspoon of flavor or as required getting desired color. Then pour them into 6
different pans or moulds and then chill it in fridge for 6-7 hours.
(4) Then
remove the fruit jelly from moulds/pans and cut them into your desired shape (I
did round small balls shape) and sprinkle with granular sugar (optional).
Your Jelly
Gumdrops are ready.
Paneer Roll
Panner Rolls are easy to make and good for those who are
veggies.
Method
Ingredients
(1) Paneer (diced) - 100 grams
(2) Onion- 2
(3) Cucumber- 1
(4) Ginger-Garlic paste- 1 teaspoon
(5) Chili (chopped) - 2
(6) Turmeric powder- ½ teaspoon
(7) Coriander leaves- 1/3 cup
(8) Salt to taste(9) Tomato
Sauce- 1 cup
(10) Chili sauce- ½ cup
(11) Chili Powder- 1 teaspoon
(12) Maida
Parathas- 3-4 pieces
(13) Oil- 1 tablespoon
Method
(1) Slice the cucumber into julienne and slice 1 onion and
keep aside.
(2) Slice another onion, then heat oil in pan and add onion, chili, ginger-garlic paste and cook for two minutes, then add turmeric powder,
salt and paneer pieces and cook it till paneer gets golden, then add tomato
sauce and chili sauce in it and mix nicely.
(3) Then make MaidaParathas, I’ve posted how to make Maida
Parathas here.
(4) Pour the sauteed chicken, sliced onions and cucumber,
coriander leaves over the parathas and roll it, and cover the down part with
tissue paper.
Your Paneer Rolls are ready to be served.
Chocolate Frosting
Made with Dark Chocolate or Chocolate Cream, used for cakes, muffins and many more.
Ingredients
(1) Chocolate Cream- 2 cups
(2) Butter (unsalted) - 1 cup
(3) Milk as required
Method
In a bowl, mix Chocolate Cream, butter and milk together, whisk it well till gets creamy and then keep aside for cooling.
