Chicken Satay

Made of boneless chicken, grilled with spices which makes a great combination in this recipe.

Chicken Satay


Recipe for Chicken Satay

Ingredients

(1) Boneless Chicken Breast- 4
(2) Red Chillies (chopped) - 1
(3) Oil- 3 tablespoons
(4) Onion- 1 large 
(5) Salt to taste 
(6) Soy Sauce- 3 tablespoons
(7) Fish Sauce- 2 teaspoons
(8) Lemon Juice- 1 1/2 tablespoons
(9) Garlic (chopped) - 7 cloves
(10) Ginger (crushed) - 1 1/2 inch
(11) Brown sugar- 2 teaspoons
(12) Honey- 1 tablespoons and 2 teaspoons
(13) Peanut Butter- 5 tablespoons
(14) Coconut Milk- 1 tablespoon

Method

(1) Cut the chicken pieces into long strips, add it in a bowl, then add salt, soy sauce (2 tablespoons), fish sauce, lemon juice (1 teaspoons),  garlic (4 cloves) , ginger (1 inch crushed) , brown sugar, honey (2 teaspoons) and mix them well and marinate for 1 hour in fridge.

(2) Heat oil on the griddle plate, thread the chicken pieces in the satay stick and place on the griddle plate, pour the marinade nicely over chicken and cook well, turn to satay time to time so that it gets cooked on all  sides.

(3) Heat oil in pan, add onion and saute, add peanut butter, soy sauce, salt, red chilli and honey and cook nicely, then take the peanut sauce of the heat and keep aside.

Chicken Satay is ready, serve it with peanut sauce!

Thai Fried Rice Chicken Noodles

This is an exotic fried rice noodles recipe made from chicken and other vegetables, also famous in Korea, easy to make and takes less time.

Recipe for Thai Fried Rice Chicken Noodles

Ingredients

(1) Vermicelli rice stick (boiled) - 200 grams
(2) Chicken Strips- 1 cup
(3) Garlic- 2 cloves
(4) Ginger (sliced) - 1 inch
(5) Red Bell pepper (sliced) - 1
(6) Fresh bean sprouts- 2 cups
(7) Chicken Stock- 1/2 cup
(8) Fresh coriander as required
(9) Oil- 2 tablespoons
(10) Corn-starch- 1 &1/2 tablespoon dissolved in 3 tablespoon Soy Sauce
(11) Salt as required
(12) Mushroom (diced) - 1 cup

For Sauce

(1) Dark Soy sauce- 2 tablespoons
(2) Fish Sauce- 1 tablespoon
(3) Lemon juice- 1 tablespoons
(4) Chicken Stock- 1/4 cup
(5) Chilli Sauce- 2 teaspoons
(6) Sugar- 1 teaspoons
(7) Pepper to taste

Method

(1) First take a bowl and add chicken strips and our corn-starch and soy sauce mixture over it and marinate, keep aside.

(2) Take another bowl, add all the ingredients for sauce, mix nicely and keep it aside.

(3) Heat oil in a wok , add marinated chicken with chopped garlic and ginger with 2 tablespoons of Chicken Stock, diced mushrooms, little salt and saute for 5 to 6 minutes, let chicken get cooked nicely. If mixture becomes dry then add few more tablespoons of Chicken Stock.

(4) Add Red Bell pepper and saute again for few minutes till it gets cooked, then add noodles and the sauce mixture and then saute for few minutes.

(5) Add bean sprouts, little salt as your wish and stir again for few minutes till get cooked.

Your Thai Fried Rice Chicken Noodles is ready, garnish it with fresh coriander! Serve it with Chilli Sauce or Tomato Sauce!

This is one of the most famous dish in Thai Cuisine, vegetables cooked in Red Curry.

Recipe for Vegetables in Red Curry

Ingredients

(1) Baby corns (sliced) - 5-6
(2) Potato- 1
(3) French Beans (chopped) - 5-6
(4) Red Curry Paste- 1 tablespoon
(5) Oil- 1 1/2 tablespoons
(6) Onion (chopped) - 1 large
(7) Tomato (chopped) - 1
(8) Salt to taste
(9) Bean curd (firm) - 50 grams
(10) Coconut Milk- 1 cup
(11) Broccoli- 5 florets

Method

(1) Heat oil in a wok and add onions and saute it then add red curry paste and saute further.

(2) Then add baby corns, french beans and tomato and salt and mix them well, cover and cook for 6 minutes.

(3) Then add broccoli, bean curd and coconut milk and cook for 5 minutes.

Your Curry is ready, Serve hot with rice!

Thai Green Tea

A cool and most refreshing beverage of all the time made from green tea leaves.

Recipe for Thai Green Tea

Ingredients

(1) Green Tea Leaves- 15 grams
(2) Water- 4 cups

Method

(1) Heat the water in pan, it should reach boiling point but doesn't boil.

(2) Place the green tea leaves in a tea strainer and place the strainer over the tea pot.

(3) Pour little hot water, when it strains then discard it. This washes tea leaves.

(4) Then pour rest of the hot water and let it steep up to 1 minutes, pour into cups and serve it hot.

CGS Tips

(1) Tea should not remain in water for too long otherwise tea will taste bitter.

(2) You can add sugar according to your requirement .

Khao Pad

It is basic Thai fried rice made from eggs and meats with any choice as you like and with the goodness of vegetables.

Recipe for Khao Pad

Ingredients

(1) Vegetable oil- 3 tablespoons
(2) Tomato sliced- 1
(3) Soy sauce- 2 teaspoons
(4) Black pepper a pinch
(5) Fish sauce- 1 teaspoon
(6) Cooked rice- 1 cup
(7) Chilli pepper- optional
(8) Any meat (chicken, beef, pork) - 1/3 cup
(9) Onion sliced- 1/2
(10) Minced garlic- 1 clove
(11) Egg- 2

Method

(1) Heat oil in a wok and then add the meat. Stir it quickly till the meat gets done. When the meat is done set it aside.

(2) Add the eggs and scramble them until they are cooked. When they are cooked set them aside.

(3) Add the fish sauce, the soy sauce and the minced garlic stirring the mixture as you keep adding the ingredients.

(4) Add the cooked rice and keep stirring till it mixes well with the sauce then add the meat and the scrambled eggs along with the slice onions and sliced tomatoes then cook for 5 minutes.

Khao Pad is ready to be served!

Tom Yum Goong

This is one of the famous Thai soups made from shrimps and peanuts and is one of the spiciest soups.

Recipe for Tom Yum Goong

Ingredients

(1) Shrimp- 700 grams
(2) Water- 10 cups
(3) Galangal (chopped) - ½ cup
(4) Kaffir lime leaves- 6
(5) Canned straw mushrooms- ½ cup
(6) Roasted red chilli paste- 2 tablespoons
(7) Fish sauce- 1 tablespoon
(8) Chillies- 2
(9) Chopped green onions- ½ cup
(10) Chopped fresh cilantro- ½ cup
(11) Fresh lime juice- 1 tablespoon
(12) Chopped dry-roasted unsalted peanuts- 6 tablespoons

Method

(1) Peel and devein shrimp, reserving shells. Combine shrimp shells and 6 cups water in an oven; bring to a simmer.

(2) Cook for 1 hour, strain broth through a sieve into a bowl; discard solids. Combine broth and remaining 3 1/2 cups water in a large saucepan; bring to a boil.

(3) Add galangal, lemongrass, and kaffir lime leaves to pan; simmer 10 minutes. Strain broth mixture through a sieve into a bowl; discard solids.

(4) Return broth mixture to pan. Add mushrooms, chilli paste, fish sauce, and chillies; bring to a boil. Stir in shrimp, green onions, and cilantro; cook 3 minutes or until shrimp are done.

(5) Discard chillies. Stir in fresh lime juice, lift out 2 cups soup from spoon into each of 4 bowls; sprinkle evenly with peanuts.


Your Soup is ready!

Tom Som Pla

This is Thai originated soup made from fish.



Recipe for Tom Som Pla

Ingredients


(1) Fish Stock- 3 cups
(2) Bekti Fish (diced)- 2 tablespoon
(3) Thai Coriander roots- 2 sprigs
(4) Lemon juice- 1 tablespoon
(5) Fish Sauce- 1 tablespoon
(6) Sugar- 1 teaspoon
(7) Galangal- 5 grams
(8) Lime leaves- 2 grams
(9) Shrimp paste- 1/2 teaspoon
(10) Ginger- 2 grams
(11) Garlic- 2 cloves
(12) Onion- 5 grams
(13) Black peppercorn- 2 grams

Method


(1) Put shrimp paste, onion, garlic, coriander roots and pepercon together and pound them and make a paste of it.


(2) In a sauce pan, add Fish Stock, galangal and lime leaves. Mix with the paste and bring it to boil, then add fish dices and cook till its done.


Your Thai soup is ready, garnish it with lemon juice and herbs.

Goo Kornng Mung Pahd Horappa

Made with lobster, flavored with sweet Thai Basil leaves.




Recipe for Goo Kornng Mung Pahd Horappa

Ingredients

(1) Lobster- 300 grams
(2) Garlic- 4-5 cloves
(3) Red Chilies- 3-4 pieces
(4) Broccoli- 10 grams
(5) Carrot- 10 grams
(6) Coriander-Garlic paste- 1 tablespoon
(7) Sugar- 5 grams
(8) Fish sauce- 10 ml
(9) Oyster Sauce- 5 ml
(10) Lime leaves- 3 sprigs
(11) Thai Sweet Basil- 3 sprigs
(12) Fish Stock- 150 ml
(13) Dark Soy Sauce- 2 ml

Method

(1) Heat the pan and saute the chopped chilies and garlic and cook it, then add coriander-garlic paste and then add lobster and cook it nicely.

(2) When fish is cooked, add Fish Stock, and then add basil leaves, carrot and broccoli and cook it for 5 minutes.

(3) When it’s done, add fish sauce and Oyster Sauce on top and garnish it with herbs.

Your dish is ready, serve hot with rice or noodles!

Talay Pahd Bai Graprou

Stir fried fishes, squids with prawns in hot basil sauce can be a great combination for sea food lovers.




Recipe for Talay Pahd Bai Graprou

Ingredients

(1) Squid- 60 grams
(2) Prawn- 60 grams
(3) Fish- 60 grams
(4) Beans- 7-8 pieces
(5) Red Chilies- 4 pieces
(6) Garlic- 3-4 cloves
(7) Sugar- 5 grams
(8) Soy Sauce- 10 ml                                        
(9) Lime Leaves- 2 sprigs
(10) Basil leaves- 2 sprigs     
(11) Fish stock- 100 ml
(12) Dark Soy sauce- 2 ml

Method

(1) In a bowl, add fish, prawns, squid and dark soy sauce and mix it well.

(2) In a pan, cook the chopped garlic and chilies, then add squid, prawn, fish and beans and cook it till gets brown.

(3) Then add Fish Stock and after sometime add lime leaves and basil leaves, sprinkle with light soy sauce.

Your dish is ready, serve hot with rice!
