Pav bhaji is a Maharashtrian fast food spicy dish that originated in Mumbai cuisine. Pav bhaji consists of bhaji (a thick potato-based curry) garnished with coriander, chopped onion, and a dash of lemon and lightly toasted pav. The pav is usually buttered on all sides.

Recipe for Pav Bhaji

Ingredients

(1) Cauliflower (chopped) - 2 cups
(2) Potatoes (cubes) - 1 cup
(3) Capsicum (minced) - 1
(4) Tomato puree - 1 cup
(5) Peas - ½ cup
(6) Ginger-garlic paste - 2 teaspoons
(7) Turmeric powder - ¼ teaspoon
(8) Red chilli powder - 2 teaspoons
(9) Pav bhaji masala - 1.5 teaspoons
(10) Vegetable oil - 1 tablespoon
(11) Butter - 1 ½ tablespoons
(12) Onion (minced) - ½ cup
 (13) Coriander leaves - a twig

Method

(1) Pressure cook the cauliflower and potatoes till tender, then heat oil in a heavy bottom pan and sauté the capsicum then add ginger garlic paste and fry for another 20 seconds.

(2) Add the turmeric powder, chilly powder, some salt and sauté for a few more seconds. Now add the tomato paste, peas, boiled potatoes and cauliflower, pav bhaji masala and butter.

(3) Keep cooking and mashing it together till it is a smooth mixture, adding water as required. This is the step where you need a lot of patience. Do this sauté-mix-mash step for about 25-30 minutes. When you try it, change the spice level according to your taste. Sprinkle coriander leaves over it.

Your Pav Bhaji is ready! Serve it with butter and pav (bread buns) and enjoy.
