One of the most
amazing sweet-dish of India, very nutritious and full of vitamin A, it is liked
by kids mostly.
Recipe for Gajar Halwa
Ingredients
(1) Carrots-
8-10 medium size
(2) Raisins- 2 tablespoons
(3) Pure ghee- 4 cup
(4) Milk- 1 cup
(5) Green cardamom powder- 2 teaspoons
(6) Khoya/mawa (grated) - l cup
(7) Sugar- 1 cup
(8) Cashew nuts- 8-10
Method
(1) Peel, wash and grate carrots and wash the raisins and pat them dry.
(2) Heat pure ghee in a thick-bottomed pan, add grated carrots and sauté for five minutes.
(3) Add milk, green cardamom powder and cook on medium heat for five to six minutes or until the milk evaporates and the carrots are cooked.
(4) Stir in the grated khoya and sugar and cook for two to three minutes or till the sugar melts and mixes well, stirring continuously.
(5) Add raisins and cashew nuts and continue to cook for two minutes more.
