Chocolate Idli

Do you think grains+chocolate could make a great combination? Lets try it!

Recipe for Chocolate Idli

Ingredients

(1) Bhog rice- 500 grams
(2) Urad dal- 250 grams
(3) Chocolate- 100 grams
(4) Sugar- 50 grams
(5) Multi grain- 100 grams
(6) Water as required

Method

(1) Soak the rice and dal in two different bowls for 1 hour (water amount=double amount of rice/dal).

(2) Then drain them and make paste with the help of grinder and mix it together.

(3) Add chocolate chips, multi grain and sugar, mix nicely and keep aside for fermentation for at least 4 hours.

(4) Then steam the mixture in idli steamer for 8 to 10 minutes till it gets smooth.

Enjoy your Chocolate Idle!

Blueberry Quinoa Idli

This is the sweet version of Indian breakfast with the flavour of blueberry.

Recipe for Blueberry Quinoa Idli

Ingredients

(1) Bhog rice- 500 grams

(4) Blueberry- 100 grams
(5) Quinoa seeds- 100 grams
(6) Water as required

Method

(3) Add chopped blueberry, sugar and quinoa, mix it nicely and leave the mixture for fermentation for 4 hours.

(4) Then steam the mixture in idli steamer for 8 to 10 minutes till it gets smooth and fluffy.

This soup is very good for health with a very attractive look.

Ingredients

(1) Tomato- 4 pieces
(2) Carrot- 1 pieces
(3) Beetroot- 1/2 piece
(4) Cinnamon- 2 cloves
(5) Black pepper as per taste

Method

(1) Steam tomato, beetroot, carrot and puree it in blender.

(2) Boil water, add cinnamon and black pepper and boil it for 2 minutes.

(3) Then the puree together in it and cook for few minutes.

Your Pink Panther Soup is ready!

Sesame Laddu

This is a sweet dish from India, very easy to make and delicious in taste.

Recipe for Sesame Seeda Laddu

Ingredients

(1) Sesame Seeds- 50 grams
(2) Jaggery- 50 grams

Method

(1) Lightly roast sesame seeds and grind it nicely.

(2) Melt jaggery in a vessel with constant stirring, add a spoon of water to avoid sticking to vessel.

(3) Add sesame seeds, mix well and then put off from fire.

(4) Bind laddus immediately before the mixtures gets cooled.

Serve it when it gets cooled!

Pointed Gourd Curry

This is the recipe for pointed gourd or patal as we say in Indian cuisine.

Ingredients

(1) Pointed Gourd (patal) - 3
(2) Potato- 3
(3) Onion- 1 large
(4) Green Chilli- 2
(5) Ginger-garlic paste- 1 teaspoon
(6) Turmeric powder- 1/2 teaspoon
(7) Coriander powder- 1 teaspoon
(8) Cumin powder- 1 teaspoon
(9) Red Chilli powder- 1 teaspoon
(10) Oil- 2 tablespoon
(11) Water- as required
(12) Salt to taste
(13) Tomato- 1

Method

(1) Heat oil in wok, then add diced potatoes and diced pointed gourd and cook them 70% and them remove them.

(2) Again heat little oil in wok, then fry chopped onion and chillies, then add chopped tomato and cook till gets melt, then ad salt and add cooked potatoes and pointed gourds.

(3) Then add coriander, cumin, turmeric and chilli powder and mix nicely and cook them well.

(4) Then pour water over it so that the vegetables will get cook, simmer it till the water gets a thick consistency.

Your Pointed Gourd Curry is ready to be served! Serve hot with rice.

Ingredients

(1) Tomato- 3
(2) Peanut soaked- 40 grams
(3) Coriander- 2 tablespoons
(4) Garlic crushed- 1
(5) Green Chilli- as required
(6) Salt to taste
(7) Cumin powder- as required
(8) Jaggery syrup- as required

Method

(1) Cut tomatoes from upper side and remove the seeds and pulp and make cups.

(2) Grind the peanut and chop the coriander leaves.

(3) Then mix garlic, salt, chillies, cumin powder, jaggery syrup in the mixture.

(4) Stuff the tomato with the peanut mixture.

Serve it!

Ingredients

(1) Water- 5 glass
(2) Lemon- 5 
(3) Jaggery as per taste
(4) Mint paste- 2 teaspoons
(5) Black salt- 1 teaspoon
(6) Cumin powder- 1 teaspoon
(7) Apple- 1 
(8) Ginger paste- 1/2 teaspoon

Method

(1) Squeeze lemon juice, grate apple in 5 glass of water.

(2) Now mix all the ingredients together.

Serve it chilled with ice cubes!

Recipe for Soya Bean Chunks Curry

Ingredients

(1) Soya bean chunks- 100 grams
(2) Potato (diced) - 100 grams
(3) Onion (sliced) - 1 
(4) Chilli (chopped) - 3
(5) Tomato (chopped) - 1
(6) Turmeric powder- 1/2 teaspoon
(7) Chilli powder- 1 teaspoon
(8) Coriander powder- 1 teaspoon
(9) Salt to taste
(10) Ginger-garlic paste-1 teaspoon
(11) Water as required
(12) Oil- 25 ml

Method

(1) Soak the soya bean chunks in water for half an hour, remove the water and strain water out of the chunks completely.

(2) Heat oil in wok, then fry the diced potatoes till it gets golden, add salt and do till it gets 70% cooked, then remove the potatoes from the wok, let the oil remain there.

(3) Then add onion and chilli, and saute for few minutes, then add ginger-garlic paste and tomato and cook till it gets melt, then add soya bean chunks and potato dices, salt and cook further.

(4) Then add turmeric powder, chilli powder, coriander powder and mix nicely and cook further.

(5) Add water in for required to cook and simmer it till the gravy gets a thick consistency.

Your Soya Bean Chunks is ready to be served!

Ingredients

(1) Milk- 1 liter
(2) Green Cardamom- 3
(3) Sugar- 300 grams
(4) Orange- 2
(5) Nestle's Milk maid- as required for desired consistency

Method

(1) Boil the milk, add sugar and cardamon in it and then simmer it further.

(2) Add milk maid in it and simmer further and put heat off if it gets a desired consistency and then cool it aside.

(3) Extract only the pulp of the orange, smash them and then add it to milk and mix it well.

(4) Refrigerate it for few hours.

Your Kheer Kamala is ready to be served.

Ingredients

(1) Carrot- 200 grams
(2) Cucumber- 200 grams
(3) Tomato- 200 grams
(4) Capsicum- 200 grams
(5) Onion- 200 grams
(6) Lemon- 2
(7) Green Chilli- few as you wish

Method

(1) Cut all the above vegetables in roundels shape as shown in the picture.

(2) Mix lemon juice in it and mix them all together.

Green salad is ready to be served.

Yakhni Pulao

A great combination of mutton and pulao.

Recipe for Yakhni Pulao

Ingredients

(1) Rice- 500 grams
(2) Mutton- 500 grams
(3) Onion- 250 grams + 500 grams
(4) Ginger- 50 grams
(5) Oil- 100 ml
(6) Garlic- 50 grams
(7) Cumin seeds- 50 grams
(8) Bay leaf- 4
(9) Peppercorn- 20 grams
(10) Whole Garam masala- 20 grams
(11) Mace- 2 leaves
(12) Caraway seeds- 30 grams
(13) Ghee- 100 grams
(14) Curd- 200 grams
(15) Salt to taste

Method

(1) Heat water in bowl, add mutton pieces in it, Soak the rice for 2 hours from before only.

(2) Make a bouquet garni, by keeping diced onion (250 grams), ginger, garlic, whole garam masala, bay leaf, pepper corn, mace, caraway seeds together in one muslin cloth tied, and then put it in boiling water with mutton pieces.

(3) Then strain the water and keep for for use, (strained water is main ingredient for this recipe), keep the mutton pieces and throw away the bouquet garni.

(4) Heat oil in a large bowl, add chopped onions (500 grams) and cook till gets brown, then add rice and mutton pieces, then add curd and salt and mix further.

(5) Add water in it double the quantity of rice i.e. 4 & 1/2 cups and then simmer it.

(6) When rice gets cooked, strain the water, then add pour ghee from top and mix it and remove from heat.

Yakhni pulao is ready, serve hot!

Ingredients

(1) Paneer- 300 grams
(2) Oil- 2 teaspoons
(3) Cumin seed- 1 teaspoon
(4) Garlic paste- 2 teaspoons
(5) Capsicum (chopped) - 1
(6) Onion (chopped) -  2
(7) Tomato (chopped) - 1
(8) Tomato puree- 200 ml
(9) Red Chilli powder- 1 teaspoon
(10) Lemon juice- 1 teaspoon
(11) Salt to taste
(12) Oil for deep fry

Method

(1) Heat oil in wok, half fry the paneer and then soak it in water, then strain it and keep paneer aside.

(2) Heat 2 teaspoons oil again in wok, add cumin seeds, garlic paste, onion, capsicum, tomato, salt and then cook it nicely.

(3) Then add paneer in it, then add tomato puree, red chilli powder and then cook it for few minutes.

(4) Then add lemon juice and mix it well then remove it from heat.

Paneer Khurchan is ready!

Ingredients

(1) Curd- 200 grams
(2) Oil- 2 tablespoons
(3) Mustard seed- 1 teaspoon
(4) Dry Red Chilli- 2
(5) Curry leaf- few
(6) Asafoetida- a pinch
(7) Coriander leaf- few
(8) Urad Dal- 2 teaspoons
(9) Salt to taste

Method

(1) Whisk the curd in bowl, add water and whisk further.

(2) Heat oil in a wok, add mustard seeds, dry red chillies, curry leaves, asafoetida, Rad dal and cook for 1 minute.

(3) Pour the curd water over it with salt, stir once and remove it from the heat immediately.

Dahi Rasam is ready to be served!

Potato Brinjal Chana Dal Curry

This is homemade curry with spicy delicious taste and the goodness of vegetables, not so tricky to make and doesn't even take a lot time.

Ingredients

(1) Potato (diced) - 150 grams
(2) Brinjal (diced) - 200 grams
(3) Chana Dal- 100 grams
(4) Onion- 1 
(5) Tomato- 1 large
(6) Green Chilli- 3
(7) Mix/South Indian Powder- 1 teaspoon
(8) Turmeric powder- 1/2 teaspoon
(9) Red Chilli Powder- 1 teaspoon
(10) Salt to taste
(11) Mustard Oil- 2 tablespoons
(12) Water- 4 cups

Method

(1) Half boil the chana dal in pressure cooker.

(2) Heat oil in a wok, then add chopped onions and green chillies, then put brinjal and potato and saute it till gets slight brown.

(3) Then add chilli powder, mix masala (south indian) powder, turmeric powder and saute it nicely.

(4) Then add chopped tomato and cook till it gets melt, then add salt as required.

(5) After it gets slightly cooked, put half-boiled chana dal then mix and saute it.

(6) Add water and mix it well, then cover it and leave it till the curry gets cooked and the water gets a thick consistency.

Now you are done with Potato Brinjal Chana Dal Curry, serve hot with rice!

(1) Fresh Jalapeno peppers- 12
(2) Cheddar Cheese (shredded)- 1 cup
(3) Cream Cheese- 200 grams
(4) Package Bacon- 200 grams
(5) Seasonings as required

Method

(1) Make a long cut in all jalapenos and don't cut it fully, then remove the seeds from them.

(2) Fill cream cheese inside the pepper and sprinkle cheddar cheese on top.

(3) Wrap slices of bacon in every pepper all over.

(4) Then bake them in oven for 15 minutes at temperature of 400 degrees F.

(5) Then remove them from oven, let it be cooled.

Your Jalapeno Poppers are ready serve them with seasonings!

Ingredients

For Dressing:

(1) Cucumber (shredded) - 1
(2) Salt as required
(3) Cream- ½ cup
(4) Plain yogurt- ¾ cup
(5) Vinegar- 2 tablespoons
(6) Garlic (minced) - 1
(7) Black pepper (cracked) - ¼ teaspoon

For Salad:

(1) Ground lamb or ground beef- 200 grams
(2) Onion (chopped) - 1
(3) Oregano leaves- 1 teaspoon
(4) Romaine salad blend- 300 grams
(5) Tomatoes (chopped) - 2
(6) Crumbled feta cheese- 120 grams
(7) Greek olives, drained- ½ cup
(8) Toasted bread wedges

Method

(1) In a bowl, add cucumber with salt, then mix well and let stand for few minutes.

(2) Drain then stir in remaining dressing ingredients. Cover and refrigerate for sometimes.

(3) Heat a wok, cook lamb, onion and Greek seasoning until meat is no longer pink then drain it.

(4) Arrange salad blend on a large serving platter top with tomatoes,
cheese, olives and lamb or as you like to decorate.

(5) Spoon dressing over salad.

(6) Serve immediately with toasted bread wedges.

Ingredients

(1) Strawberries (hulled) - 800 grams
(2) Granulated Sugar- 1/2 cup or as you like
(3) Cornstarch- 1 & 1/2 teaspoons
(4) Salt just a pinch

Method

(1) Heat the pan, then add strawberries, sugar, starch and salt and cook over low heat till sugar gets dissolved.

(2) Cook for ten minutes, if required water you can little if consistency gets thick.

(3) Remove it from heat and allow it to get cooled.

Your Sauce is ready!

This is a hot chocolate cake filled with chocolate sauce inside, one of the great desserts of all the time.

Recipe for Chocolate Lava Cake

Ingredients

(1) Flour- 3 tablespoons
(2) Egg- 3
(3) Dark Chocolate- 100 grams
(4) Butter- 5 tablespoons
(5) Sugar- 3 tablespoons
(6) Cocoa Powder- 2 teaspoons

Method

(1) Melt the butter and chocolate in microwave oven or just normally, and mix them in a bowl nicely.

(2) Whisk the eggs and sugar in a bowl for 5 minutes till sugar gets melted.

(3) Then add the chocolate mixture in the egg mixture and combine them nicely, then sift in flour and cocoa powder and mix them nicely.

(4) Then butter 4 ramekins, then spoon the cake mixture in them and then refrigerate it for half an hour.

(5) Preheat the oven at 400 degree F, bake it for 15-20 minutes.

Chocolate Lava Cake is ready, serve hot!

Recipe for Samosa

Ingredients

For Stuffing

(1) Potato (medium) - 2
(2) Onion (large) - 1
(3) Cooked green peas- 5 tablespoons
(4) Peanuts cooked- 3 tablespoons
(5) Red chilli powder- 1/2 teaspoon
(6) Coriander powder- 1 teaspoon
(7) Garam masala powder- 1/4 teaspoon
(8) Turmeric powder- a pinch
(9) Ginger (chopped) - 1 tablespoon
(10) Oil- 1 tablespoon
(11) Salt to taste
(12) Water- 1/4 cup
(13) Oil for deep fry

Method

(1) Boil the potato and peanuts in pressure cooker until gets soft, peel and chop the potatoes.

(2) Heat oil in pan, then add chopped ginger and chopped onions and saute for few minutes, then add peanuts and cooked green peas, then add chilli powder, garam masala powder, coriander powder and turmeric powder and stir nicely.

(3) Now add water in it and cook for few minutes, then add potatoes and cook it till the mixture gets dry.

Your stuffings for Samosa is ready, fill it in the dough, cover it and then deep fry them in oil heated in a wok.

Serve it with Tomato Sauce, Chilli Sauce or Tomato Ketchup.

Dough for Samosa

This is a really nice recipe especially for evening snacks, most common snack in Indian Cuisine. So we will give simple steps to make dough for Samosa.

Recipe for Samosa Dough

Ingredients

(1) All purpose flour- 3/4 cup
(2) Semolina- 1/4 cup
(3) Oil- 2 tablespoons
(4) Salt- 1/2 teaspoon
(5) Baking Powder- 1/4 teaspoon
(6) Water as required

Method

(1) Take a bowl, add flour. semolina, salt, baking powder and oil, mix them well until gets crumble.

(2) Add water as required in it and make it a smooth and stiff dough, knead it for 10 minutes till it gets elastic and then keep it aside for 30 minutes.

(3) Again knead the dough for few minutes and divide them into small balls (10-12 balls). then roll them into thin circles and cut them into half with a knife.

(4) It will now look like half moon shape, roll it and make coke and then you can put the filling in it and cover the upper part and fry it.

You can also use Samosa Cutter to cut the dough in shape as shown in the video below;



CGS Tips: You can also use wheat flour (equal quantity as all purpose flour) instead of semolina.

Ingredients

(1) Chicken- 500 grams
(2) Chilli Powder- 1 teaspoon
(3) Butter- 2 tablespoons
(4) Lemon juice- 1 tablespoon
(5) Salt to taste

For Marination 

(1) Curd- 3/4 cup
(2) Salt to taste
(3) Ginger-Garlic paste- 2 tablespoons 
(4) Chilli Powder- 1 teaspoon
(5) Garam Masala powder- 1/2 teaspoon
(6) Mustard Oil- 1 & 1/2 tablespoons
(7) Lemon Juice- 1 & 1/2 tablespoons
(8) Oil for frying

For Gravy

(1) Butter- 35 grams
(2) Ginger paste- 2 teaspoons
(3) Chopped chillies- 3
(4) Chilli powder- 2 teaspoons
(5) Salt to taste
(6) Whole garam masala- 1 tablespoon
(7) Tomato Puree- 300 grams
(8) Garam masala powder- 1/2 teaspoon
(9) Cream- 3/4 cup

Method

(1) Cut the chicken into small 2-3 inch pieces and wash nicely, then add chilli powder, lemon juice and salt in the chicken, mix nicely and then keep it aside for 30 minutes.

(2) In a bowl, add curd, chilli powder, salt, ginger-garlic paste, lemon juice, garam masala powder, mustard oil and mix nicely, then add chicken in it and mix well and then marinate it for 4 hours in fridge.

(3) Then heat oil in a wok, then fry the marinated chicken till gets golden brown, then keep the fried chickens aside.

(4) Heat 30 grams butter in wok, add whole garam masala and saute it for few minutes, add ginger-garlic paste and chopped green chillies and saute further, then add tomato puree, red chilli powder, garam masala powder, salt and 1 cup of water and cook well till gets boiled.

(5) Add the cooked chicken pieces in it and then reduce the fire and simmer it for 10 minutes. While serving garnish it with butter and coriander leaves.

Your Butter Chicken is ready, serve hot!

Ingredients

(1) White Chocolate (melted) - 200 grams
(2) Whipped Cream-  550 ml
(3) Gelatine leaves- 2x5
(4) Castor Sugar- 60 grams
(5) Egg- 2
(6) Vanilla Icing as required 

Method

(1) In a bowl, beat the eggs and then add sugar and beat further till gets fluffy.

(2) Then soak the gelatin in cold water, then squeeze water from it, then melt the gelatin in heated pan.

(3) Then add white chocolate and egg mixture in the gelatin and mix nicely.

(4) Whip the cream nicely in blender and then add it in the chocolate mixture.

(5) Then divide the mixture in small chocolate bowls, add vanilla icing over it and then refrigerate it for 4 hours.

Your chocolate Mousse is ready, serve it and enjoy!

Ingredients

(1) Semolina- 120 grams
(2) Sugar- 100 grams
(3) Ghee-80 grams
(4) Cocoa powder- 1 & 1/2 teaspoons

Method

(1) In a bowl, soak the semolina for 2-3 hours, keep it aside.

(2) Heat ghee in a wok, add sugar and mix nicely till it melts and caramelizes to golden colour.

(3) Drain the semolina from water and mix cocoa powder in it, then add the semolina to the ghee mixture and cook well on low heat.

(4) Cook till it gets brown colour nicely and ghee separates.

Your Chocolate halva is ready, cut into pieces and serve cold.

Ingredients

(1) Boneless Chicken Breast- 4
(2) Red Chillies (chopped) - 1
(3) Oil- 3 tablespoons
(4) Onion- 1 large 
(5) Salt to taste 
(6) Soy Sauce- 3 tablespoons
(7) Fish Sauce- 2 teaspoons
(8) Lemon Juice- 1 1/2 tablespoons
(9) Garlic (chopped) - 7 cloves
(10) Ginger (crushed) - 1 1/2 inch
(11) Brown sugar- 2 teaspoons
(12) Honey- 1 tablespoons and 2 teaspoons
(13) Peanut Butter- 5 tablespoons
(14) Coconut Milk- 1 tablespoon

Method

(1) Cut the chicken pieces into long strips, add it in a bowl, then add salt, soy sauce (2 tablespoons), fish sauce, lemon juice (1 teaspoons),  garlic (4 cloves) , ginger (1 inch crushed) , brown sugar, honey (2 teaspoons) and mix them well and marinate for 1 hour in fridge.

(2) Heat oil on the griddle plate, thread the chicken pieces in the satay stick and place on the griddle plate, pour the marinade nicely over chicken and cook well, turn to satay time to time so that it gets cooked on all  sides.

(3) Heat oil in pan, add onion and saute, add peanut butter, soy sauce, salt, red chilli and honey and cook nicely, then take the peanut sauce of the heat and keep aside.

Chicken Satay is ready, serve it with peanut sauce!
