Recipe for Potato Au Gratin

Ingredients

(1) Potato (peeled) - 4
(2) Grated Cheese- 2 cups
(3) Cream- 1/2 cup
(4) Milk- 1 cup
(5) Garlic- 1 or 2 cloves
(6)  Dried Parsley- 1/4 teaspoon

Method

(1) Preheat the oven at 180 degree C. In a pan heat milk.

(2) Slice the potatoes, cut the garlic clove and rub it all over the baking dish.

(3) Then add the milk in it and parsley and mix well, and remember not to boil the milk.

(4) In a baking dish, arrange the potato slices in layers overlapping each other pieces and then sprinkle half of the cheese and half of milk mixture over it.

(5) Arrange another layer of potato slices over that and sprinkle rest of the cheese and milk mixture over it.

(6) Cover the baking dish and bake it in preheated oven for 30 minutes, then remove the cover and bake again for 10 minutes till the top layer gets golden.

Potato Au Gratin is ready, garnish with broccoli, serve hot!

Ingredients

(1) Dark Chocolate (grated) - 1 cup
(2) Kaju (cashew nuts) - 1/4 cup
(3) Almonds- 1/4 cup
(4) Raisins- 1/4 cup
(5) Pistachios- 1/4 cup

Method

(1) Melt the chocolate in Microwave oven, then take out and mix it till gets smooth.

(2) Add all the above nuts and mix it well.

(3) Put the mixture into the moulds and refrigerate it.

Chocolate Nut is ready, unmould  it and serve!

Recipe for Hamburger

Ingredients

(1) Hamburger Buns (toasted) - 4
(2) Ground Beef - 450 grams
(3) Cheddar Cheese (sliced) - 6
(4) Mustard- 2 teaspoons
(5) Worcestershire sauce- 2 teaspoons
(6) Chilli Sauce- 2 teaspoons
(7) Onions (chopped) – 1
(8) Lettuce leaves as required
(9) Sliced tomato as required
(10) Sliced onion as required
(11) Ketchup as required
(12) Mustard as required

 Method

(1) In a bowl, add chopped onions, chilli sauce, Worcestershire sauce and mustard and mix nicely, then break beef into small pieces and mix it in the sauce mixture and then shape it into 4 patties for 4 buns as we taken.

(2) Cover the patties and grill it for 6-8 minutes at the temperature about 160 degrees C.

(3) Then place 1 slice of cheese in base bun then put on Pattie over it, then put one more cheese slice over it, then add lettuce leave, tomato and onion slices with mustard and tomato ketchup and then put the top bun over it.

(4) Do the same as done above with the rest 3 hamburger buns.

This is a French recipe; Poulet means chicken in French Cuisine. This is a creamy recipe made of chicken, cream and capsicum.

Ingredients

(1) Chicken Breast (skinless) - 500 grams
(2) Mushroom (sliced) - 200 grams
(3) Capsicum (sliced) - 1
(4) Butter- 2 tablespoons
(5) Flour- 2 tablespoons
(6) Salt and Pepper to taste
(7) ChickenStock- 200 ml
(8) Cream- 250 ml
(9) Egg yolks- 2
(10) Paprika- 1 teaspoon
(11) Lemon Juice- 1 tablespoon

Method

(1) Steam the chicken and then allow it to cool and then cut it into strips.

(2) Heat the pan, melt butter in it, add mushrooms and pepper and sauté for few minutes till gets cooked up to 5 minutes, then stir in flour and seasonings.

(3) Add Chicken Stock in it and mix well, bring it to boil and stir till stock gets thickened, then add chicken pieces and cream and sauté well till chicken gets cooked.

(4) In a small bowl, beat the eggs, paprika and lemon juice nicely and then add in the chicken mixture and cook for few minutes.

Your Dish is ready, serve it hot with seasonings!

Ingredients

(1) Boneless fish- 200 grams
(2) Onion- 3
(3) Potatoes-3
(4) Garlic flakes- 5
(5) Ginger- 2 inches
(6) Pepper powder- 1 teaspoon
(7) Garam masala powder- 1 teaspoon
(8) Eggs- 3
(9) Bread crumbs- ½ cup
(10) Coriander leaves (chopped) - 1 tablespoon
(11) Oil for frying
(12) Salt to taste

Method

(1) Boil the fish flesh with a little salt and keep it aside.

(2) Boil the potatoes and mash them.

(3) Finely chop the green chillies, ginger, garlic and onion and keep it aside.

(4) Now take a pan and pour 2 tablespoons oil and bring to heat.

(5) When the oil is very hot add the onions, ginger, garlic and green chillies and sauté till the onions are golden brown.

(6) Now add the boiled fish and cook till all the water evaporates and it becomes a dry mixture.

(7) Sprinkle the pepper powder and garam masala. Mix well and then add the mashed potatoes and cook till an aroma begins to rise.

(8) Turn of the flame and add the coriander leaves and salt to taste. Now mix it all up and make small balls of this mixture and set it aside.

(9) Take a bowl and beat the eggs. In another plate spread the powdered bread crumbs.

(10) Now take the small balls and make it a little flat like a patty and dip it in the egg and then roll it in the bread crumbs, so that each cutlet is coated evenly on all sides.

(11) Heat oil for deep frying in a frying pan and then deep fry all the cutlets.

Recipe for Roasted Onion and Eggplant

Ingredients

(1) Large onion (quartered) - 1
(2) Garlic- 1 clove
(3) Medium eggplant (baingan) - 1
(4) Chilli powder- ¼ teaspoon
(5) Olive oil for brushing
(6) Lemon juice to taste
(7) Cream Cheese- 1 cup
(8) Salt and black pepper to taste

Method

(1) Preheat oven to 425 degrees F.

(2) Quarter onion and place on a baking sheet with eggplant and season lightly and drizzle with olive oil.

(3) Roast for 45 minutes, until eggplant is blackened and the skin wrinkled and then allow it to cool.

(4) Cut off and discard the end of eggplant. Place eggplant in a food processor with onion, cream cheese, and garlic, chilli powder and blend until completely smooth.

(5) Season with salt, pepper and lemon or lime juice to taste.

Recipe for Cheesecake Stuffed Strawberries

Ingredients


(1) Large strawberries- 400 grams

(2) Cream cheese- 200 grams
(3) Powdered sugar- 4 tablespoons
(4) Vanilla essence- 1 teaspoons
(5) Bread Crumbs- optional

Method


(1) Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside). Prep all strawberries and set aside.
(2) In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or zip lock with the corner snipped off.

(3) Fill strawberries with cheesecake mixture. Once strawberries are filled, (optional: dip the top in graham cracker crumbs). If not serving immediately, refrigerate until serving.

Khao Pad

It is basic Thai fried rice made from eggs and meats with any choice as you like and with the goodness of vegetables.

Ingredients

(1) Vegetable oil- 3 tablespoons
(2) Tomato sliced- 1
(3) Soy sauce- 2 teaspoons
(4) Black pepper a pinch
(5) Fish sauce- 1 teaspoon
(6) Cooked rice- 1 cup
(7) Chilli pepper- optional
(8) Any meat (chicken, beef, pork) - 1/3 cup
(9) Onion sliced- 1/2
(10) Minced garlic- 1 clove
(11) Egg- 2

Method

(1) Heat oil in a wok and then add the meat. Stir it quickly till the meat gets done. When the meat is done set it aside.

(2) Add the eggs and scramble them until they are cooked. When they are cooked set them aside.

(3) Add the fish sauce, the soy sauce and the minced garlic stirring the mixture as you keep adding the ingredients.

(4) Add the cooked rice and keep stirring till it mixes well with the sauce then add the meat and the scrambled eggs along with the slice onions and sliced tomatoes then cook for 5 minutes.

Khao Pad is ready to be served!

Tom Yum Goong

This is one of the famous Thai soups made from shrimps and peanuts and is one of the spiciest soups.

Recipe for Tom Yum Goong

Ingredients

(1) Shrimp- 700 grams
(2) Water- 10 cups
(3) Galangal (chopped) - ½ cup
(4) Kaffir lime leaves- 6
(5) Canned straw mushrooms- ½ cup
(6) Roasted red chilli paste- 2 tablespoons
(7) Fish sauce- 1 tablespoon
(8) Chillies- 2
(9) Chopped green onions- ½ cup
(10) Chopped fresh cilantro- ½ cup
(11) Fresh lime juice- 1 tablespoon
(12) Chopped dry-roasted unsalted peanuts- 6 tablespoons

Method

(1) Peel and devein shrimp, reserving shells. Combine shrimp shells and 6 cups water in an oven; bring to a simmer.

(2) Cook for 1 hour, strain broth through a sieve into a bowl; discard solids. Combine broth and remaining 3 1/2 cups water in a large saucepan; bring to a boil.

(3) Add galangal, lemongrass, and kaffir lime leaves to pan; simmer 10 minutes. Strain broth mixture through a sieve into a bowl; discard solids.

(4) Return broth mixture to pan. Add mushrooms, chilli paste, fish sauce, and chillies; bring to a boil. Stir in shrimp, green onions, and cilantro; cook 3 minutes or until shrimp are done.

(5) Discard chillies. Stir in fresh lime juice, lift out 2 cups soup from spoon into each of 4 bowls; sprinkle evenly with peanuts.


Your Soup is ready!

Recipe for Vegetarian Strawberry Jelly

Ingredients

(1) Agar-Agar powder- 1 tablespoon
(2) Strawberries- 500 grams
(3) Agave syrup- 5 tablespoons
(4) Vanilla essence- 1 teaspoon
(5) Boiling Water- 2 cups

Method

(1) Wash the strawberries and blend them in a food processor or mixer grinder, strain it so that the unwanted particles will be removed, place the strawberry juice in a bowl and add agave syrup in it and mix nicely.

(2) Boil 2 cups of water, when it comes to boil add agar-agar powder, vanilla essence and whisk nicely until gets dissolved, then remove it from fire and mix in strawberry mixture. (NB: Strawberry mixture should be 37 degrees C warm)

(3) Add strawberry liquid, lemon juice, cold water and sugar in a saucepan over low heat. Cook it nicely, increase heat to high. Bring to the boil, and then remove from heat.

(4) Now pour the mixture in jelly moulds and keep it aside for 20 minutes to get settled then refrigerate it overnight.

Your Vegetarian Strawberry Jelly is ready to be served!

Recipe for Strawberry Jelly

Ingredients

(1) Strawberries (chopped) - 1 kilograms
(2) Lemon juice- ¼ cup
(3) Cold water- 2 & 2/3 cups
(4) Castor sugar- 1 cup
(5) Powdered Gelatin- 1 cup
(6) Boiling water- 2/3 cup

Method

(1) Place strawberries into a glass bowl. Cover with a sheet of baking paper. Place over a saucepan of simmering water for 45 minutes, stirring occasionally till gets soft then remove from heat.

(2) Line a sieve with muslin cloth, then place over a bowl. Spoon strawberries into sieve, then leave for 3 to 4 hours then remove the pulp.

(3) Add strawberry liquid, lemon juice, cold water and sugar in a saucepan over low heat. Cook it nicely, increase heat to high. Bring to the boil, then remove from heat.

(4) Sprinkle Gelatin over boiling water. Whisk with a fork until dissolved. Add to strawberry mixture and mix nicely.

Pour mixture into small bowl like dishes and cover it then refrigerate it overnight until set.

Your Strawberry Jelly is ready to be served!

Aloo Poori

Ingredients

For Aloo Curry:

(1) Potato (diced) - 4-5
(2) Onion (chopped) - 1
(3) Ginger-Garlic paste- 1 teaspoon
(4) Tomatoes (chopped) - 2
(5) Green Chilli (chopped) - 2
(6) Turmeric powder- 1 teaspoon
(7) Red Chilli powder- 1 teaspoon
(8) Garam masala powder- ½ teaspoon
(9) Oil- 2 tablespoons
(10) Water- 2 cups

For Poori:

(1) Wheat flour- 3 cups
(2) Oil- 1 teaspoon
(3) Water to knead flour
(4) Oil for frying

Method

For Aloo Curry:

(1) Heat oil in a wok, then add onion and green chillies and sauté them till gets golden, then add ginger-garlic paste and tomato and cook till tomatoes gets melt, then add salt, turmeric powder, red chilli powder and garam masla powder and mix it nicely.

(2) Now add diced potatoes in it, cook it nicely till potatoes gets softer, then add water in it and then simmer it till the gravy gets thick consistency.

That’s all for Aloo Curry!

For Poori:

(1) Knead the flour and make firm dough with water and oil, then make small balls of the dough.

Ingredients

(1) Coffee Powder- 2 tablespoons
(2) Sugar- 4 tablespoons
(3) Water (boiling) – 2 tablespoons
(4) Milk- 1 litre
(5) Fresh Cream as required for garnishing

Method

(1) Heat the milk, until it gets boil, then in a bowl, add boiling water, sugar and coffee powder and beat it for 5-7 minutes till get foamy.

(2) In a mug add 1 tablespoon of coffee mixture and then add boiling milk in it.

(3) Stir nicely and then decorate it with whipped cream over coffee.



Cappuccino is ready, serve hot!

Ingredients

(1) Butter- 1 cup
(2) Granulated Sugar- ¾ cup
(3) Flour- 2 cups
(4) Brown Sugar- ¾ cup
(5) Eggs- 1
(7) Vanilla Essence- 1 teaspoon
(8) Baking Soda- 1 teaspoon
(9) Sweet Chocolate Chips- 2 cups

Chocolate Icing:

Method

(1) Preheat the oven at 400 degrees F, then in a bowl, add butter, sugars, egg and vanilla and beat nicely, then add flour, baking soda and salt and make firm dough.

(2) With the help of tablespoon, drop the dough rounded spoonful and around 2 inch apart from one another on a greased cookie sheet

(3) Bake it for 10 minutes or required till gets golden brown, then keep them aside for cooling.
